Take your salad to the next level with a tasty, homemade dressing. Most dressings are quite simple to make at home and use ingredients that most people already keep in their kitchen. Homemade dressings are also a great way to make use of leftover herbs.

Lime and cilantro dressing
Fresh and lightly sour. If you are fond of cilantro, you will like this dressing as well. Simply add all the ingredients to a blender and blend them for 1 minute. The dressing can also be used as a light marinade for chicken. 

What you need

  • 1,5 dl extra virgin olive oil
  • 1 dl finely chopped cilantro
  • 2 limes juiced
  • 1 tbsp white wine vinegar 
  • 1 tbsp honey
  • 2 cloves of garlic
  • 1 tsp shallots
  • A pinch of salt

Italian vinaigrette with fresh herbs
A simple yet wonderful Italian-inspired vinaigrette. This one is based on olive oil and vinegar, so make sure to use ones of good quality. Mix all of the ingredients except the olive oil together and add in the olive oil.

What you need

  • 1,5 dl extra virgin olive oil
  • ½ dl balsamic vinegar or red wine vinegar
  • 1 tbsp finely chopped fresh oregano
  • 2 tsp Dijon mustard
  • ½ tsp finely chopped fresh thyme leaves
  • ½ tsp dried oregano
  • ½ cloves of garlic
  • 1 tsp salt
  • ½ tsp sugar or honey
  • A pinch of black pepper

Creamy herb dressingA yoghurt-based dressing with a creamier texture. In this recipe, you can add your favourite herbs – find a few suggestions below. 

What you need

  • 1 dl crème fraiche or yoghurt
  • ½ dl extra virgin olive oil
  • ½ dl finely chopped fresh herbs of your choice, e.g. basil, parsley, dill, marjoram or oregano
  • 1 tbsp white wine vinegar 
  • 1 lemon juiced
  • 1 clove of garlic

The dressings are good for 2 weeks if you store them in the fridge.
