Visit the Middle Eastern kitchen with taboulleh – a light and fresh summer salad full of veggies and fresh herbs. Taboulleh makes the perfect side for summer barbecue nights or as part of a vegetarian meal with several green dishes.

Taboulleh can be made on a basis of bulgur, couscous or quinoa as you prefer, and there is plenty of opportunities to experiment using different fresh herbs. Classic recipes suggest using parsley, but also basil and mint taste delicious in the Middle Eastern dish.

What you need

  • Bulgur, couscous or quinoa
  • Fresh parsley (or fresh basil or mint)
  • A good olive oil
  • Lemon juice
  • Red onions
  • Cucumber
  • Tomatoes
  • (Freshly chopped red chilli)

How you do it

Start out by boiling your bulgur, couscous or quinoa and let it cool off. Add olive oil and lemon juice and mix it together. Chop up parsley, red onions, cucumber, tomatoes and chilli nicely, and mix it together with the other ingredients. That’s it!

Taboulleh is both quick and easy to make and can be served as a side for pretty much any type of meat. Enjoy!
