Olive oil dip with fresh herbs

Make a tasty olive oil dip and serve it with a loaf of crusty bread. When the herbs are chopped fine, their taste is released and absorbed by the olive oil, making for a fresh and tasty dip – perfect as a small appetizer to gather around before the main course.

These herbs are perfect to use in the olive oil dip: tarragon, parsley, oregano, rosemary, basil and thyme.

How you do it

  • Start by chopping the herbs fine – use 2 tablespoons of each herb (and avoid using the hard stems).
  • Add 2 cloves of minced garlic.
  • Add 2 tablespoons chopped/minced ginger.
  • Add sea salt and a little chili.
  • Stir in 6 tablespoons of quality olive oil.
  • Mix it together.

The olive oil dip can be stored covered in the refrigerator for up to 3 days. Enjoy!
