When the calendar says December, nothing brings out the holiday spirit like joining the family in the kitchen to bake Christmas cookies. Perhaps you already have your family favourites that you bake every year.
Try something new this year and give your Christmas cookies a green touch. The taste of herbs complements the Christmas flavour just great – and then they look great in the cookie jar or at the coffee table.

Rosemary and honey cookies
What you need
- 350 g butter
- 85 g honey
- 700 g flour
- Lemon or orange zest
- 1 tablespoon freshly chopped rosemary
- 1 pinch of dried lavender
How you do it
- Using a hand mixer, blend butter and honey together until smooth.
- Add in flour, rosemary, lavender and lemon zest, continuing to blend until all the ingredients are mixed well together.
- Preheat the oven to 160 degrees.
- Chill the dough for 30 minutes or more.
- Roll out the dough into little 2,5 cm balls.
- Press down the dough a bit using either a cookie press, a fork or your fingers. You can decorate the cookies with a pattern around the edges using a fork to press down. And if you want to make the cookies extra delicious, use your thumb to make a center in the middle of each cookie and fill it with jam or chocolate.
- Bake the cookies for 15-20 minutes or until the edges are slightly brown.
- Let the cookies cool off and harden, as they can be a bit crumbly while hot.
Lemon cookies with your favourite herbs

- 1 egg
- 1 teaspoons vanilla extract
